3-4 large sweet potatoes
1-2 Tbsp. coconut oil
1 tsp. curry powder
1 tsp. sea salt
Pepper to taste
Peel sweet potatoes and cut into thin, long slices, like fries. Place on cookie sheet and drizzle 2 Tbsp. of coconut oil over potatoes. Sprinkle curry powder evenly over fries and salt and pepper. Bake at 425 degrees F for 35-40 minutes, stirring occasionally. (If you like more of a crunchy, browned outside...put oven on broil for 5-8 minutes, or until desired browning).
